Week 1

Mini-Class
Creole Cooking

Charlmaigne Thibodeaux

Come and enjoy a fun down home Louisiana hands-on class while learning a little history from my up bringing. I was born in Lake Charles Louisiana and was raised in a little town in the country called Lawtell/Opelousas. I will be teaching you the authentic way to cook at least four Southwest Louisiana Creole dishes. I now live in California and teach Creole cooking monthly night classes for the San Mateo School District. Here are the dishes I will be teaching:

  • Chicken and Sausage Gumbo

  • Fricassee (Meatball Stew)

  • Shrimp Etouffe

  • Beignets (old-fashioned donuts)

  • Red Beans

Also deserts like Peach Cobbler, Banana Pudding, and some Pecan Praline candy.
